Lemon Sugar Cookie Cups Recipe

I was looking for a new springy kind of recipe in my pile of recipes to try when I ran across this one. I also had a couple of lemons I needed to use sooner than later. These little cookies are soft with a creamy tart filling. If desired you could also top the cookies before serving with a dollop of whipped cream.

I used to be so lazy when it came to zesting a lemon. I hated to get out my big box grater and chopping it was way too much work. Then one day I bought a microplane zester-grater. It has been my best friend ever since. In fact I own several so I can quickly grate everything from zest to cheese. I love them and they are among my favorite kitchen tools.

Yield: 2 dozen

Lemon Sugar Cookie Cups made with a lemon sugar cookie base and a lemon cream filling. Sweet and tart at the same time.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1/4 teaspoon baking powder
  • pinch salt
  • 1/2 of the zest from the lemon
  • Filling
  • 2 eggs
  • 2 egg yolks
  • 1/4 cup whipping cream
  • juice from 1 large lemon
  • 1/4 cup sugar
  • 1/2 of the zest from the lemon
  • confectioner's sugar for dusting

Instructions

  1. Mix together in a mixer bowl the butter and sugar until light and fluffy. Add the egg and mix it in thoroughly. Add the flour, salt, baking powder and lemon zest. Mix until incorporated. Wrap dough in waxed paper and put in refrigerator for 30 minutes.
  2. In a small saucepan mix together all of the filling ingredients. Whisk together. Continue to whisk over medium heat until mixture is thickened. Set aside.
  3. Spray a mini muffin tin. Divide dough into 24 equal pieces. Press the dough into the bottom and sides of each cup evenly. If dough gets too warm put the whole tray back in the refrigerator for 10 minutes.
  4. Divide the lemon mixture evenly between the cups.
  5. Bake at 350 degrees for about 12 minutes, cookie cups should just be starting to brown. Let cool. Dust with confectionary sugar before serving. Refrigerate.
