Herbed Fried Potatoes
3 potatoes, peeled and diced
3 tablespoons butter
1/2 teaspoon dried oregano
salt and pepper
2 tablespoons sniped parsley
2 tablespoons minced celery
2 tablespoons minced onion
Melt butter in heavy skillet.
Add potatoes, cover and cook for 10 minutes over medium heat.
Turn carefully and cook uncovered for 10 more minutes, turning occasionally to brown all sides.
The last five minutes of cooking time, sprinkle with remaining ingredients.
Heat through and serve.
