Just couldn’t think of what to cook for supper! Still a little snow on the ground so I think this stew will hit the spot. It looks great, easy to make. Thanks for the idea.
I’ve already made this once, and it was a hit with my family of 6. We served it over rice, and replaced the corn with cauliflower (because of an allergy). Today I’m doubling it up so I can free half for an easy and quick meal on a busy day. Thanks for sharing such a comforting and cheap recipe.

I wanted to thank you! I made this for my in -laws but had to double the recipe and they LOVED it! My mother in law even said it was better then the one she’s made in the past. Asked for the recipe. It was delicious and I plan on making it over and over.

Doesn’t say when to add the peas. I’m assuming with the corn. Looking forward to trying it, hot it going right now. Think I’ll make some cornbread to go with it!
Prepped exactly as written, but omitted the peas and added fresh green beans. Excellent, quick, and inexpensive!
It was a HUGE hit for dinner tonight, for my 8 month old, 4 years and 13 years old!!! Didn’t happen often! I also double the recipe and add a bit of spices, cinnamon, all spice and nutmeg. I’ll do it again, and I will browse your blog for more delicious recipes! Can’t wait for tomorrow, reheated stew are the best!

We don’t have a Dutch oven. How long would you recommend cooking this in a crockpot? Sounds delicious!
I don’t see why not. I’d cook it for 8 hours on LOW or 4 on HIGH.
The Poorman’s Stew is really good. I made mine with a bit of a Tex Mex flair and added chopped onion, garlic, a bit of Serrano pepper diced and sauteed. Browned the meat and added two chopped tomatoes, salt, pepper, cumin, 2 TBS tomato paste, small can of beef broth. I added cubed potatoes and carrots, cooking them a liitle before adding cubed Calabasas squash, then peas and fire roasted corn. Added a little water and adjusted seasonings. Put the lid on and finished cooking. Quick and delicious!!!
