Field Greens With Apples
1 head green leaf lettuce
1 bunch mescaline greens
1/2 c. pine nuts, toasted
2 Granny Smith apples
Crumbled goat cheese
Dressing:
1/2 c. olive oil
1/2 c. balsamic vinegar
1/4 c. sugar
1 tsp. celery seed
1 tsp. Dijon mustard
Whisk all dressing ingredients. Can keep dressing for up to 2 weeks in refrigerator.
Toast pine nuts on cookie sheet in oven at 400º for 3 minutes, WATCHING them CAREFULLY, as they burn easily.
Slice apples thinly. Toss all ingredients.
