Apple Walnut Blue Cheese Burst

3/4 cup buttermilk
1 egg
1/4 cup margarine or butter — cut up
2 1/3 cups bread flour
2/3 cup whole wheat flour
2 tablespoons granulated sugar
3/4 teaspoon salt
1 teaspoon active dry yeast or bread machine yeast
1 cup chopped, peeled cooking apples
3/4 cup crumbled blue cheese
1/3 cup chopped walnuts — toasted
2 tablespoons brown sugar

Select the recipe size. Add the first 8 ingredients to the machine according to the manufacturer’s directions. Select the dough cycle. When cycle is complete, remove dough from machine. Punch down. Cover and let rest 10 minutes. Meanwhile, for filling, in a medium mixing bowl combine the apples, blue cheese, walnuts and brown sugar.

For the 1-1/2 pound recipe: On a lightly floured surface, roll the dough into an 18-in. x 12-in. rectangle. Spread with the filling. Starting from a long side, roll up into a spiral; seal edge. Place, seam down, on a greased large baking sheet. Bring ends together to form a ring. Moisten ends; pinch together to seal ring. Using kitchen scissors or a sharp knife, make a cut from the outside edge toward center, leaving about 1/2-in. attached. Repeat around the edge at 1- to 1-1/2-in. intervals. Gently pull apart each slice. Cover and let rise in a warm place for 45 to 60 minutes or until nearly double. Bake in a 350′ oven for 30 to 35 minutes or until bread sounds hollow when lightly tapped. If necessary, loosely cover with foil last 10 to 15 minutes to prevent overbrowning. Remove; cool on a wire rack.
