Chocolate Muffins

2 tablespoons unsweetened cocoa powder
1 1/2 cups all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup skim milk
1 egg
4 teaspoons unsalted butter — melted
1 teaspoon vanilla extract

Preheat oven to 400 degrees F. Spray a 12-cup muffin tin with nonstick cooking spray.

In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, combine the milk, egg, butter and vanilla. Pour wet ingredients over dry ingredients. Stir until just blended (do not overmix).

Spoon the batter into the cups, filling each about two-thirds full. Bake until a toothpick inserted comes out clean about 20-25 minutes. Cool in pan on rack for 5 minutes; remove from pan.
