Lemon Velvet Ice Cream
2 1/2 C. heavy cream
2 1/2 C. half and half
1 C. fresh lemon juice
1 t. lemon extract
2 C. sugar
grated rind of 1 lemon
Mix all ingredients together in a large bowl. Stir until sugar dissolves. Chill well.
Transfer the mixture to your ice cream machine and process according to manufacturer’s instructions.
