Flutes and Pearls for Mom and Mexican Corn Salad

I want to share with you also a recipe that I just love, it is made with fresh corn, tomatoes, black beans and a fresh lime garlic cumin dressing. You could roast the corn if desired but I just quickly blanched it. It has a bright, fresh flavor and is a great addition to any picnic, buffet or dinner. It is better the longer it sets so it is also a great make ahead dish. If you are serving it in your Wilton Armetale you can go straight from the refrigerator to table. The dish will even help to keep the salad cool!

Flutes and Pearls for Mom and Mexican Corn Salad

Prep Time: 20 minutes

Cook Time: 5 minutes

Total Time: 30 minutes

Yield: 6-8

Fresh corn, tomatoes, black beans and vegetables all in a lime cumin dressing. Mexican corn salad is fresh and light for summer parties.

Ingredients

  • 4 ears fresh corn
  • 1 cup chopped celery
  • 1 cup chopped mini sweet peppers
  • 2 cups chopped tomatoes
  • 1/2 cup chopped onions
  • 1 can black beans
  • big handful of cilantro chopped
  • Dressing
  • 1/2 cup olive oil
  • 2 limes
  • 1/4 cup Chinese vinegar or white vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • pepper
  • 2 cloves garlic

Instructions

  1. Blanch the corn in boiling water for 3 - 4 minutes. Cool. Remove corn from cobs. Add to a large mixing bowl.
  2. Rinse the black beans in a strainer really well. Drain. Add to corn.
  3. Add celery, peppers, tomatoes, onions and cilantro to the bowl. Toss to combine.
  4. Mix together the dressing ingredients. Pour over corn mixture. Mix until the corn mixture is coated with the dressing. Taste to adjust seasoning.

A reminder also is these pieces are not dishwasher safe due to the harsh chemicals in dishwasher soaps, please hand wash your pieces to insure they last a lifetime.
