1 C. flour
1 t. salt
1 t. baking powder
2 t. sugar
2 eggs beaten
1/2 C. + 1 T. milk
1 t. vanilla
1 t. cinnamon
4 medium apples cored, peeled and sliced into 8 pieces
Combine flour, salt, sugar and baking powder in a bowl. In another bowl, mix together eggs, milk and vanilla. Add to the flour mixture and mix well. Let set for 5 minutes.
Dip the apple slices into the batter and fry in hot oil until golden brown. Drain on paper towels.
Serve with hot maple syrup or sprinkle with confectionary sugar.
