San Pedro Breakfast Pizza
1 each fresh pizza dough, 5 oz.
2 oz chipotle-ranchero sauce
2 oz oven-roasted tomatoes
6 oz eggs, scrambled
2 T fresh basil, chiffonade
1.5 oz cheddar cheese, shredded
1.5 oz mozzarella cheese
1 t chef`s magic seasoning
Par bake pizza crust in wood oven, top with chipotle ranchero sauce.
In an omelet pan, saute the oven-roasted tomatoes with olive oil, add eggs and begin to scramble, add basil and seasoning.
Top pizza crust with scrambled egg mix, top with cheeses and finish in the wood oven.
Garnish with chop parsley. This can be done in a regular oven on a pizza brick.
