Brown Sugar Oatmeal Pancakes
1 egg, beaten
2 tablespoons oil
1 cup buttermilk
1/2 cup wheat flour
1/2 cup flour
1/2 teaspoon salt and baking soda
1/3 cup packed brown sugar
1/2 cup + 2 tbl. quick cooking oats
In mixing bowl, combine egg, oil and buttermilk.
Combine flours, baking soda, salt and sugar; add to egg mixture. Stir in oats.
Pour by 1/3 cupfuls onto lightly greased hot griddle. Turn when bubbles form on top of pancakes.
Yield: about 10 pancakes.
