6 tablespoons butter or margarine, divided
3 cups frozen ore ida potatoes o’brien
3/4 teaspoon celery salt
1/4 cup milk
1/2 teaspoon salt
1/2 cup shredded cheddar cheese
1/4 cup sliced green onions
In 10″ skillet over medium heat, melt 3 tbl. butter.
Add potatoes and sprinkle with celery salt. Cook, turning frequently, for about 10 minutes, or until potatoes are tender and lightly browned. Remove from skillet and keep warm.
In the same skillet, melt remaining butter.
In a bowl, beat eggs, milk, salt and pepper; add to skillet and cook over medium heat. As the eggs set, lift edges, letting uncooked portion flow underneath. When eggs are set, spoon the hot potatoes on top.
Garnish with cheese, green onions and bacon bits. Cut into wedges.
Yield: 4-6 servings.
