Orange French Toast with Fresh Fruit

1 large egg

1 egg white

2 tablespoons frozen orange juice concentrate

1/2 teaspoon vanilla extract

4 ounces French bread, preferably whole wheat, cut into 8 equal slices

1 1/2 cups sliced strawberries

1/2 cup orange sections

1 tablespoon orange liqueur

2 teaspoons confectioners’ sugar

Preheat the oven to 425 degrees. Spray a nonstick baking sheet lightly with nonstick cooking spray

In a shallow bowl, beat the whole egg, egg white, orange juice concentrate, and vanilla extract until well blended.

Dip each slice of bread into the egg mixture and coat well on both sides. Place the bread on the prepared baking sheet.

Bake the french toast for 8 to 10 minutes, or until the bottoms are lightly browned. Turn the slices over and continue baking for 2 to 3 minutes, or until the second sides are browned

Meanwhile, in a medium bowl, combine the strawberries, oranges, and orange liqueur and toss gently.

To serve, place 2 slices of French toast and one-fourth of the fruit on each of 4 plates. Dust each serving with 1/2 teaspoon of the confectioners’ sugar.
