Pecan Waffles
2 extra large eggs
1 3/4 cups buttermilk
1/2 cup butter
2 teaspoons vanilla extract
1 3/4 cups all purpose flour
2 tablespoons brown sugar
2 teaspoons baking powder
1 tablespoon baking soda
1 teaspoon salt
1/2 cup chopped pecans
1/2 teaspoon cinnamon
In a medium size bowl, whisk together the eggs, buttermilk, melted butter and vanilla.
In a separate bowl combine the remaining ingredients.
Combine the wet and dry ingredients.
Prepare waffle iron by spraying with vegetable oil. Preheat the iron. Pour 1/2 cup of batter onto waffle iron.
Cook according to your waffle iron instructions.
