Anadama Bread

Makes 2-pound loaf

1/3 C. oatmeal

3 T. cornmeal

1 1/2 C. boiling water

3 T. butter or vegetable oil

3 T. dark molasses

2 t. salt

1 1/4 C. whole-wheat flour

2 1/2 C, bread flour

2 t. active dry yeast

In bowl, combine oatmeal and cornmeal. Pour boiling water over them, stirring to break up lumps. Let mixture stand 20 minutes. Stir and pour into machine pan. Add butter or vegetable oil, molasses, salt, flours and yeast, in order. Bake on whole-wheat cycle.
