Bread Machine Cinnamon Pecan (or Raisin) Rolls
For the dough:
1 cup water
1 large egg
3 ¼ cups bread flour
¼ cup sugar
1 teaspoon salt
3 tablespoons dry milk
¼ cup butter
1 ½ teaspoons active dry yeast
Place all ingredients in bread machine in order recommended my manufacturer. Select Dough Cycle.
For the Filling:
½ cup softened butter, divided
½ cup brown sugar, divided
2 teaspoons cinnamon, divided
2/3 cups or either chopped pecans or whole raisins, divided
When dough is completed, place on lightly floured surface and divide it into two equal pieces. Roll each piece into an 8×9 inch rectangle. Spread surface of each rectangle with ¼ cup of softened butter. Sprinkle each piece evenly with ¼ cup of brown sugar, 1 teaspoon cinnamon, and 1/3 cup pecans or raisins.
Starting with the 8-inch side roll each piece, jelly-roll style. Pinch seam to seal. With seam side down, cut each roll into 1 inch (or larger, if desired) slices. Place on greased or parchment paper-lined baking sheet two inches apart and cover with a damp cloth. Allow to rise in a warm place for 40 minutes to 1 hour, or until doubled.
Preheat oven to 375ºF. * Remove cloth and bake for 10 to 15 minutes or until golden brown.
Drizzle warm rolls with the following icing:
Sweet Icing
1 cup confectioners sugar
1 tablespoon milk
½ teaspoon vanilla
Mix until smooth and drizzle over warm rolls.
*Note: If desired, instead of icing the warm rolls, you may sprinkle the tops of the rolls with brown sugar before baking.
