Gluten Free Bread

1 C. rice flour

3/4 C. tapioca flour

2 T. plus 1 t. sugar

1 3/4 t. xanthan gum 

1/3 C. dry milk powder

3/4 t. salt

1 1/2 eggs (large) slightly beaten

3/4 C. plus 2 T. water (120 degrees)

2 T. butter (melted)

2 1/4 t. rapid rise yeast

1/2 t. vinegar

Mix together all dry ingredients. Mix together all liquids, except melted butter. Put liquids in bread machine, then put dry ingredients. Make a well in the center and add yeast. Put butter in each of four corners. Set machine to rapid rise.
