Grissini – Tall and Thin Breadsticks

Ok, so mine aren’t tall and thin. Well they were before I took this picture, they were actually over 12 inches long. I got frustrated trying to take a picture of them and decided to cut them in half. It also didn’t help that I made these the day before I took the picture and every time I walked them I grabbed one. Love this recipe for them and I’m wondering why I’ve been buying them when they are so easy to make. I can see adding some fresh chopped up rosemary or tarragon to these also for a change. I think they would also make a nice gift to the foodie in your life in a gourmet basket.

Grissini – Tall and Thin Breadsticks

Cook Time: 20 minutes

Total Time: 3 hours

These grissini are tall, thin crunchy breadsticks flavored with Parmesan cheese.


  • 2 1/4 cups flour
  • 1 package yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 1 cup warm water (may need a little more)
  • 1 egg white
  • 1 teaspoon water
  • grated parmesan


  1. Add the flour, yeast, sugar and salt to your mixing bowl. Mix it to combine.
  2. Add the oil and water and mix until it comes together. Switch to your dough hook and continue to mix until the dough is soft and satiny, about 4 minutes.
  3. Cover the bowl and let raise until doubled.
  4. Roll out the dough into a 6 x 12 rectangle. Cut the dough in half and then each half into 10 equal pieces.
  5. Roll the pieces of dough into long thin sticks about 12 inches long. Place on a greased baking sheet. Cover and let set for 10 minutes while you preheat the oven to 350 degrees. Beat egg with water. Brush on top of grissini. Sprinkle with grated parmesan cheese.
  6. Bake for 30 minutes until completely baked through.
  7. Store in an airtight container.
