Potato Bread

2 pkgs. yeast

1/2 C. lukewarm water

1 1/2 C. scalded milk

2/3 C. butter

1/2 C. sugar

2 t. salt

1 C. mashed potatoes

6 C. all purpose flour

2 eggs, beaten

melted butter

Mix yeast and water in a bowl and set aside. Combine milk, butter, sugar, salt and mashed potatoes. Add yeast and 3 cups flour and beat well. Blend in eggs. Gradually add remaining flour to mixture.

Turn onto lightly floured surface and knead until smooth. Place in a greased bowl and brush top of dough lightly with butter.

Cover and let rise for one hour. Pat and shape into loaf form. Place in greased loaf pan, brush again with melted butter, cover and let set in a warm area for 30 minutes.

Bake in a 375°F. oven for 20 minutes or until it sounds hollow when tapped.
