The Loner’s Grilled Swordfish

The Loner’s Grilled Swordfish

1 lb. swordfish fillets, boned and cut into 1″ pieces
2 Tbsp soy sauce
2 Tbsp orange juice
1 Tbsp oil
1 Tbsp catsup
1 Tbsp chopped fresh parsley
1 small garlic clove, chopped
1/2 tsp fresh lemon juice
1/4 tsp dried oregano, crumbled
1/4 tsp freshly ground pepper

1. Arrange swordfish in a single layer in a shallow baking dish. Combine all remaining ingredients in a small bowl and mix well. Pour over fish, turning to coat well. Let stand at room temperature, turning once, for 30 minutes.

2. Preheat broiler or prepare barbecue grill. Broil or grill fish 4 inches from heat source for 8 minutes. Baste with sauce, turn, and continue cooking until fish flakes easily with a fork — about 7 to 10 minutes. Serve over rice.

Makes 2 to 3 servings.
