Portabello Pizzas
1 large portabello mushroom per person
1 tablespoon olive oil per mushroom
3 tablespoons marinara sauce per mushroom
Fresh garlic, minced
Fresh Basil
Fresh Mozzarella cheese
Using a spoon, gently scrape the gills from each portabellos; liberally brush inside and out with olive oil.
Add marinara sauce, 2 or 3 tiny slices fresh mozzarella cheese; garnish with garlic and basil.
Consider adding marinated artichoke hearts, anchovy fillets, minced green pepper, and diced onion.
Place portabellos on a medium hot grill, close the lid and grill 6 or 7 minutes.
