Grilled Vegetables on Skewers

1 large onion

1 green bell pepper

8 medium white mushrooms

1 red bell pepper

1 fennel bulb

1/2 cup olive oil

1 garlic clove, minced

3 tablespoons fresh herbs, minced
Kosher salt and freshly cracked pepper

In a large bowl, combine oil, garlic, herbs, cracked pepper.

Cut vegetables to approximately the same size. Toss with marinade and chill for several hours. Thread onto skewers.

Sprinkle with kosher salt and grill on medium hot fire until slightly caramelized. 10 to 15 minutes.
