Fried Corn Cakes
3 ears of fresh Corn on the Cob.
1 cup of Flour (general purpose)
1 cup of Sugar.
2 eggs
1/2 cup of milk (whole milk is best)
1 teaspoon salt
1/4 teaspoon ground pepper
Take 3 ears of Fresh Corn on the Cob (the sweeter the corn the better).
Take mixing bowl and cut corn off of cob, then scrape the cob to get the milk juices out.
Then take about 1 cup of flour and 1 cup of sugar.
Add two eggs, and 1/2 cup of milk.
Add 1 teaspoon of sugar and ¼ teaspoon of ground pepper.
Mix all ingredients together. It will look like pancake batter with corn.
You will want to add flour, milk, and sugar to your liking and the desired thickness you want.
Then drop your mixture as you would onto a hot skillet that is greased well. Bacon grease is great, it really adds to the flavor.
Cook as if you were cooking pancakes.
