Cheesy Grits

4 C. boiling water

1 t. salt

1 C. grits

1/2 C. butter

2 eggs

1 C. grated cheddar cheese

milk (added to the eggs to make 1 cup)

Boil water. Add salt and grits. Lower heat and cook for 3 – 4 minutes. Remove from heat and stir in butter, cheese and the egg/milk mixture. Stir very well.

Pour into a buttered 2 quart casserole. Bake at 350°F. for about 45 minutes.
