Sweet and Sour Green Beans
1 quart cooked green beans, fresh or frozen
1 medium onion, chopped
8 slices bacon, fried crisp and crumbled
1/2 C. vinegar
1/2 C. sugar
1/2 C. bacon grease
Place a layer of cooked beans in a slightly greased, flat casserole, then a layer of onion and a layer of bacon. Repeat layers. Pour sauce of vinegar, sugar and bacon grease over casserole. Cook uncovered at 350 degrees for 30 minutes, then cover and cook an additional 30 minutes.
Makes 8 servings.
Note: For a fast version, for each 10-ounce package of frozen French-style beans, cook 3 or 4 slices of bacon until crisp. Sauté a small chopped onion in the drippings, add 1/4 cup vinegar and 1/4 cup sugar and the package of frozen beans. Separate with fork and cook covered about 5 minutes, then uncovered over high heat until all liquid is gone (about another 5 minutes).
