Woodford Pudding
Woodford Pudding originated in Woodford County, Kentucky over 100 years ago. It is a spongy baked pudding made with blackberry jam and spiced with cinnamon and nutmeg, topped with a sauce.

3/4 cup sugar
4 tablespoons butter, softened
3 eggs
3/4 cup flour
1/2 teaspoon cinnamon
1/2 teaspoon allspice or nutmeg
1 cup blackberry jam
3 tablespoons buttermilk or sour milk

Beat sugar and butter until well blended; beat in eggs. Add remaining ingredients, mixing well. Pour into an 8- or 9-inch baking dish and bake at 325 for 35 to 45 minutes, or until browned.
