Dick Mory’s Famous, “Yes, I’ll Have Some More” Chocolate Cheesecake
1/3 cup margarine or butter
1 1/4 cups graham cracker crumbs
1/4 cup sugar
3 (8-ounce) packages, cream cheese, softened
14-ounce can sweetened condensed milk (not evaporated milk)
12-ounce package semi-sweet chocolate bits or 8 (1-ounce squares semi-sweet chocolate, melted in microwave on medium heat for approximately 3 minutes)
4 eggs
2 teaspoons vanilla
Preheat oven to 300 degrees. Combine margarine, crumbs and sugar; pat firmly on bottom of a 9-inch spring form pan. In a large mixer bowl, beat remaining ingredients; mix well. Pour into prepared pan. Bake 1 hour and 5 minutes or until cake springs back when lightly touched. Cool to room temperature. Chill. Remove side of pan. Garnish as desired. Refrigerate leftovers. Makes 15 servings. Note: If you want to remove the cheesecake from the base of the pan, spray the pan with cooking oil. Then cut a piece of waxed paper to fit and spray it also before pouring the mixture in.
