Cara Mia Chicken
1 lg. chicken cut up (I would use chicken breast, skin and bone removed)
1 jar marinated artichoke hearts
1 Two Pound can (2 1/2 cups) canned tomatoes
2 cloves garlic
1 Tbs. salt
1/2 Tbs. oregano
1/2 Tbs. basil
1/2 Tbs. pepper
1/2 pound fresh mushrooms sliced (I would use 1 pound or more)
1/2 cup dry sherry
Season chicken with a little seasoned salt and garlic salt. Dip chicken pieces in Bisquick. Place in pan and bake uncovered for1/2 hour.
Combine tomatoes, artichokes, garlic, mushrooms, and all spices in pan and stir. When thoroughly mixed, pour over chicken, cover and bake at 350 degrees for 1 hour. During last few minutes, add sherry. Serve garnished with chopped fresh parsley.
Best cooked one day ahead. reheat and serve.
