Chicken and Corn Casserole
1 whole chicken, cut up
1 whole onion
1 bell pepper
4 cloves garlic
1 can whole kernel corn
1 cup oil
Preheat oven to 350F. Cut up chicken in 8 pieces. Wash, then season well.
Pour 1 cup oil in skillet, Heat; brown chicken. Drain. Saute onion and bell pepper in a casserole dish. Place chicken in pan and season on top to taste. Drain corn. Pour over chicken. Cover. Place in oven.
Cook for 45 minutes at 300F.
