Chinese Ginger Chicken

1 – 4 pound chicken, cut into 8 pieces
3/4 cup ginger brandy
1/2 cup honey
1/2 cup soy sauce
1/2 cup chicken stock or canned low salt broth
1/4 cup fresh lemon juice
1/4 teaspoon ground ginger
Salt and freshly ground pepper

Combine all ingredients in a large bowl. Cover and refrigerate for 8 hours or overnight.

Preheat oven to 350 degrees.

Arrange chicken in large shallow baking dish.

Brush with brandy mixture. Bake chicken until juices run clear, basting frequently, 35 to 40 minutes. Serve immediately.

Serves 4 to 6.
