Latin Chicken Breasts

4 pieces all-natural boneless, skinless chicken breast cut into strips
4 tsp. smoked paprika
4 tsp. lime juice
1 tsp. lime zest
2 tsp. sherry vinaigrette
4 tsp. fresh cilantro-bruised leaves
1 serrano chile deseeded and sliced
Add kosher salt to taste
Add fresh ground black pepper to taste
1 c. olive oil
3 tsp. roasted garlic
1 tsp. achiote (annatto) seed, softened in the sherry vinaigrette

Mix softened annatto seed and smoked paprika with lime juice, lime zest, sherry vinaigrette and mix till smooth. Add oil and other remaining ingredients. Adjust seasoning. Marinate chicken strips for at least two hours. Drain chicken from marinade and grill or roast in a hot oven. Serve with chive cucumber-flavored yogurt sauce.
