Mustard Pecan Chicken
4 boneless, skinless chicken breasts
1 medium onion, chopped
3/4 C. heavy whipping cream
1/4 C. Dijon mustard
1/3 C. chopped pecans
Sprinkle chicken breasts with salt and pepper. In a well-oiled skillet, cook chicken breasts until lightly browned, about 5 minutes. Add onion and stir to combine.
Meanwhile, mix cream and mustard. Pour over chicken. Sprinkle with chopped pecans and simmer for 20 minutes.
