Roast Chicken and Garlic Potatoes
4 boneless chicken breasts — 8 oz each
3 pounds baking potatoes, quartered
3/4 cup heavy cream
1/2 cup butter
salt and pepper
4 cloves garlic, minced
Pan sear breasts on both sides and finish in a preheated 350ºF oven for about 10 to 15 minutes or until done.
Cook potatoes in water until cooked through.
While still hot add the remaining ingredients and mash well.
