Undercover Chicken

1 green bell pepper
1 onion
2 garlic cloves
1 (7 oz.) jar sun-dried tomato halves, in oil
4 skinless, boneless chicken breasts
1 tbsp. dried Italian seasoning
1 tsp. salt
1/2 tsp. pepper

Cut bell pepper into strips, thinly slice onion, and mince garlic. Drain tomatoes, and chop.

Tear out four 12-inch squares of heavy duty aluminum foil.

Arrange chicken, bell pepper, onion, garlic, and tomato in the centers of the foil squares.

Sprinkle evenly with seasoning, salt, and pepper; fold foil to seal.

Place on a cookie sheet or pan to catch escaping juices.

Bake at 375 degrees for 35 minutes or until done.
