Vernon’s Jerk Chicken
3 lbs. chicken
1/2 cup ground allspice
6 to 8 garlic cloves or 2 tsps garlic powder
4 to 6 Scotch bonnet peppers
1 tablespoon ground thyme
1 onion
1 teaspoon cinnamon
1/2 teaspoon nutmeg
salt/ pepper to taste
2 tablespoons soy sauce
2 tablespoons white vinegar
Put everything in a food processor and blend until smooth. Rub the meat (chicken, pork or beef) with the seasoning. Marinate up to two days.
Preheat oven to 350.
Place in oven for 1 hour, basting every 10-15 minutes. (if dries out, add water)
