Chocolate Chip Coconut Cake
1-1/4 cups Canola oil
2 eggs
1-1/2 cups Coconut milk
1 tsp. pure Vanilla extract
1/2 tsp. coconut extract
2-1/2 cups all purpose flour (sifted once before measure)
1-1/2 cups sugar
1 tsp. salt
3-1/2 tsp. baking soda
3/4 cups Miniature chocolate chips
Preheat oven at 325º. Grease and light flour Bundt pan
In large bowl, mix together oil, eggs, coconut milk, van extract, coconut extract, flour, sugar, salt and baking soda. Add chocolate chips and stir.
Pour batter into pan and bake for one hour and 15 minutes, cool 10 minutes before removing from pan.
