Big Fat Ice Cream Sandwiches

Preheat oven to 375°F and spray a cookie sheet with cooking spray.

Mix together 1 (18.5-ounce) package of chocolate cake mix, 1/2 cup water and 2 eggs.

Drop the dough by rounded tablespoonfuls 3 inches apart on the cookie sheet. Bake for 6 to 8 minutes; cool.

After the cookies cool, turn 1 cookie upside down and put a small scoop of softened ice cream on the flat side. Top with the flat side of a second cookie. Press together slightly if needed. Wrap with plastic wrap and place in the freezer to harden.
