Cabbage with Bacon and Cheese Sauce
1/2 lb. bacon
1/4 cup bacon fat
1/4 cup flour
2 cups milk
1/4 lb. cheddar cheese, shredded
salt and pepper
1 medium head cabbage, cut into wedges
croutons
Cook bacon, drain, and keep warm.
Prepare white sauce with bacon fat, flour and milk. When thickened, stir in cheese and add salt and pepper to taste.
Cook cabbage in small amount of boiling salted water until tender, about 7 minutes. Drain and put on platter.
Top with cheese sauce and garnish with bacon.
Sprinkle with croutons.
