Green Bean Dilly Stir-Fry
4 teaspoon vegetable oil
1 1/2 lb. green beans, washed & trimmed
6 scallions, sliced
1/4 cup chopped fresh dill
3 tablespoon red wine vinegar
1/2 teaspoon salt (optional)
option: 8 oz. diced Canadian Bacon
Place beans in saucepan. Cover with cold water & cook over medium high for 15 minutes. Drain.
Heat oil in skillet over high heat; add beans & stir fry for 4 minutes, until brown specks appear on beans. Add scallions, dill, vinegar, & salt. Cook for 8 minutes over medium heat.
Serve hot.
To use as an entree, toss in diced Canadian Bacon before serving.
