Guess Again Carrots
2 lbs. carrots
2 tablespoons butter
1 medium onion grated
6 – 8 ounces grated sharp cheddar cheese
1/2 teaspoon salt
1/8 teaspoon pepper
green pepper (optional)
Pare, slice and boil carrots and mash well. Add butter, onion and cheese
Place in buttered casserole. Top with crumbs and butter.
Bake at 350° F. for 40 minutes until bubbling.
Garnish with parsley.
