Marinated Green Beans
1 lb cooked green beans
Vinaigrette Dressing:
1/4 cup vinegar
1/2 cup olive oil
1/4 tsp salt
1/8 tsp black pepper
2 tsp grated onion
Combine ingredients for vinaigrette.
Place beans in a deep oblong dish.
Pour the dressing over them and marinate for 1/2 hour.
Place beans on a bed of lettuce garnished with tomatoes and a bit of dressing dribbled over.
Garnish with parsley.
