Spinach Stuffed Tomatoes
3 slices bacon
1/2 cup chopped onion
8 oz. fresh spinach, chopped
1/2 cup sour cream
dash hot pepper sauce
4 medium tomatoes
1/2 cup shredded mozzarella cheese
Cook bacon till crisp, drain, reserving 2 T drippings. Cook onion in drippings till tender, stir in spinach. Cook, covered till tender.
Remove from heat and stir in sour cream, crumbled bacon, and pepper sauce
Cut tops from tomatoes; remove centers leaving shells. Drain. Salt shells, place in 8 x 8 x 2″ baking pan. Fill with spinach mixture.
Bake 375° F. for 20-25 minutes. Top with cheese; bake till cheese melts, 2-3 minutes more.
