Squash Croquettes
2 cups cooked yellow squash
1 large onion
1 large bell pepper
2 tablespoons sugar
2 eggs
1/2 stick butter
2 tablespoons flour
salt and pepper
Sauté onions & pepper in butter. Mix all ingredients (drain squash well).
Form into balls about the size of an egg. Roll in breadcrumbs and fry in deep fat.
Allow at least 2 or 3 per person.
This should feed 6 or 7 ~~
