Broiled Shrimp

1 1/4 lbs. medium shrimp, peeled and deveined

2 T. olive oil

2 cloves garlic, finely chopped

1/3 C. dry breadcrumbs

1/4 C. grated Parmesan cheese

Salt and pepper, to taste

In a bowl, combine shrimp, oil, garlic, breadcrumbs, Parmesan, and pepper. Spread shrimp on a rimmed baking sheet and sprinkle with salt.

Broil the shrimp about 5 inches from the element for 3 to 4 minutes, without turning them, or until they turn pink and are just cooked through. During broiling, watch the shrimp carefully to be sure they do not burn.
