Margarita Shrimp or Scallops
2 TBS triple Sec
2 TBS lime juice
1/4 cup tequila
1/4 cup olive oil
2 cloves garlic, peeled and minced
1 jalapeño, seeded and minced
1/4 cup cilantro, chopped
2 lbs. shrimp or scallops
Combine first 7 ingredients in a shallow dish or zip top plastic bag. Add shrimp, cover or seal and chill for around 2 hours.
Remove shrimp from marinade, discarding marinade.
Grill or broil. Arrange in grill basket and grill 10 minutes or until shrimp turns pink.
