Pad Thai

Place 8 oz rice noodles in water, soak 45 min.

1/2 c water
1/4 c fish sauce
2 Tbls sugar
1 Tbls lime juice
1 tsp paprika
1/2 tsp cayenne pepper

Combine and set aside.

1 whole chicken breast, cut into strips
8 med shrimp, cut in half length wise
1/2 lb bean sprouts
3 gr onions, white part only
3 Tbl veg oil
4 lrg garlic cloves
1 egg
4 Tbls finely crushed peanuts

Heat oil in wok (or pan); fry garlic until brown, increase heat and add chicken; cook until almost done, push chicken aside and scramble egg in pan; mix w/chicken when set. Add noodles(drain first), shrimp, sauce mixure, and 3 Tbls peanuts; cook and stir over high heat for 2 or 3 minutes or until noodles are soft. Add 1/4 lb bean sprouts and onions, cook, stirring 1 minute. Spoon onto platter, top w/rest of bean sprouts and peanuts.
