Parmesan Baked Fish
4 fish fillets, cod, sole or rockfish
1/4 C. grated Parmesan cheese
1/4 C. mayonnaise
Cayenne pepper
2 medium zucchini, sliced
1/2 medium red bell pepper, cut in strips
Preheat oven to 450° F.
If using foil, center each fillet in a 12-inch by 18-inch sheet of heavy duty foil. Spread with mayonnaise. Sprinkle with Parmesan cheese and cayenne pepper. Top with vegetables.
Fold up packet and bake 18 to 22 minutes on a cookie sheet in oven or 10 to 12 minutes in covered grill. Fish can also be baked in an oven pan.
Serves four.
