Poached Salmon
Poach salmon in water with 1 tablespoon peppercorns, 1 onion, quartered, 4 lemon slices until almost cooked through. Remove steaks from liquid.
Mix 1/2 cup low-fat mayonnaise with chili powder and paprika to taste and top salmon with thin layer.
Broil salmon, 1 minute-remove before mayonnaise melts, and serve.
