Scalloped Scallops
3 T. butter
1 pint scallops
3 T. flour
1 cup cream
3/4 cup milk and/or milk and scallop liquid
Salt and pepper
Parboil scallops about 5 minutes in boiling water.
Melt butter…add scallops and coat with butter.
Add flour, stirring, add cream and milk gradually.
Cook until thickened. Season to taste.
Put in a buttered casserole, cover with crumbs.
Bake 400° F for 15 minutes.
Serves 4
