Holiday Oatmeal Cookie Mix

2-3/4 C. all-purpose flour

2 t. salt

1 t. baking soda

2 C. firmly packed brown sugar

1 C. granulated sugar

2 C. solid vegetable shortening

1 container (18 oz./6 c.) quick or old fashioned oats, uncooked

4 (1-qt. each) clear, unbreakable plastic jars

4 C. Add Ins (see below)

For cookie mix stir together flour, salt and baking soda in very large bowl. Add sugars; mix well. Cut in shortening with pastry blender or 2 knives until mixture is crumbly. Stir in oats.

In 1-quart clear unbreakable plastic jar with lid, layer as follows: 1 cups cookie mix, 1/2 cup Add Ins, 1 cup cookie mix, 1/2 cup Add Ins, 1 cup cookie mix. Place lid on jar; seal tightly.

Repeat the above using remaining mix and Add Ins to fill 3 more jars. Add gift tags listing preparation instructions.

Makes enough mix for 4 gift jars.

Add Ins: Each of the following variations provides enough ingredients for 1 gift jar.

Confetti Cookies – Use 1 cup candy-coated chocolate pieces, divided.

Cherry-Berry Cookies – Use 1/2 cup dried cherries and 1/2 cup dried cranberries.

Chocolate Cherry Cookies – Use 1/2 cup dried cherries and 1/2 cup chocolate chips.

Nutty Chocolate Chippers – Use 1/2 cup chocolate chips and 1/2 cup chopped walnuts, pecans or almonds.

Peanut Chocolate Cookies – Use 1 cup peanut butter flavor chips, divided and 1/4 cup unsweetened cocoa powder. Add the cocoa powder as the final ingredient in the jar.

Attach the following recipe with the gift mix:

To prepare cookies using the Holiday Oatmeal Cookie Mix you’ll need 1 egg, 1/4 cup water, 1 teaspoon vanilla and 1 jar Holiday Oatmeal Cookie Mix.

Heat oven to 350° F. Lightly spray cookie sheets with cooking spray.

In large bowl, combine egg, water and vanilla; mix well. Add entire contents of 1 jar of Holiday Oatmeal Cookie Mix and stir with fork until all dry ingredients are moistened and a stiff dough forms.

Drop by rounded tablespoonsful onto cookie sheets. Bake 14-16 minutes or until light golden brown. Cool 1 minute on cookie sheets and remove to wire cooling racks. Cool completely.

Makes 3 dozen.

Note: If the mix is for the Peanut Chocolate Cookies variation, increase water from 1/4 cup to 1/2 cup.
